Our noodles are made with natural ingredients, just wheat flour, water and salt. The noodles are laid on bamboo racks and naturally dried under the Taiwanese sun.
The gentle drying process is expertly monitored to achieve perfect moisture control - low enough to ensure 18 months of shelf stability without any preservatives, yet high enough to preserve the noodle’s signature springy bite. This natural time-honoured process produces noodles that stay fresh naturally without chemicals or shortcuts, with a superior texture, a porous surface that absorbs sauces deeply and flavour that no machine can replicate.

Bamboo allows the air to circulate evenly around each noodle as it dries. It’s a small detail but it makes a difference in texture.

We are noodles not pasta!
While Asian wheat noodles may look similar to pasta, they offer a uniquely different experience in texture, flavour and culinary tradition.
Pasta is made from durum wheat semolina and is ideal for classic Italian sauces, while our noodles use wheat flour and traditional sun-drying methods. The result is a springy, chewy texture with deeper wheaty flavours — designed to shine in sauces, broths and quick comfort meals.
Our sun-dried noodles are made with only wheat flour, water and salt. You won’t find artificial preservatives or flavour enhancers in our noodles, as the sun-drying process itself is the preservative.
Absolutely. Our noodles have a firm, springy texture that works beautifully in ramen broths. Cook according to instructions and add to your hot broth just before serving.
